Chole Bhature: A Punjabi Delight
Ingredients:
- For the Chole:
- 2 cups dried chickpeas, soaked overnight
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger-garlic paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 cup chopped tomatoes
- 1 cup water
- Salt to taste
- For the Bhature:
- 2 cups whole wheat flour
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 cup yogurt
- 1/2 cup water
- Oil for frying
Instructions:
- To make the Chole, drain the soaked chickpeas and rinse them well.
- In a large pot, combine the chickpeas, onion, garlic, ginger-garlic paste, cumin, coriander, red chili powder, garam masala, tomatoes, water, and salt.
- Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the chickpeas are tender.
- To make the Bhature, combine the flour, sugar, salt, yogurt, and water in a large bowl.
- Knead into a soft dough, adding more water if necessary.
- Divide the dough into small balls and roll them out into thin circles.
- Heat oil in a deep fryer or large skillet.
- Fry the Bhature until they are golden brown on both sides.
- Serve the Chole with the Bhature, garnished with your favorite toppings.
Tip:
For a tangy twist:
Add a squeeze of lemon juice to the Chole before serving to enhance its flavor.
