Gumbo
Ingredients:
- 1 pound andouille sausage, sliced

- 1 red bell pepper, chopped
- 1 celery stalk, chopped

- 1 teaspoon black pepper
Instructions:
- In a large pot, brown the sausage over medium heat. Remove the sausage from the pot and set aside.
- Add the chicken, shrimp, crab meat, onion, green bell pepper, red bell pepper, and celery to the pot. Cook over medium heat until the vegetables are softened.
- In a small bowl, whisk together the flour and water. Add the flour mixture to the pot and cook for 1 minute
- Add the tomatoes, thyme, basil, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the sausage back to the pot and cook for 5 minutes more.
- Serve over rice.
